{dylan's recipes: mini lasagnas}


Happy Monday!

My sister Dylan is back for another recipe: mini lasagnas! They are so delish & SO EASY.

Here's a little intro:

  • Guess what? I don't make an appearance in this video! Well, my voice does...but that's it. You're welcome.

  • Since my video camera broke last week {annoying} I recorded this on my iPhone. Try your best to ignore my shaky hands ;)


Mini Lasagnas


Ingredients:
  • Marinara sauce
  • Mozzarella
  • Lasagne noodles {we used gluten-free ones, obvi}
  • Ricotta
  • Ramekins {to bake in}
1. Boil water...cook the lasagna noodles. The pot we used was small, however, so we cut some of them in half before placing them in the water.




It's okay if the noodles don't turn out perfect :)

2. In a separate bowl, {& while the pasta cools}, mix together marinara sauce & a dollop of ricotta cheese.



3. Place a small piece of lasagna noodle in one of the ramekins.



4. Place a dollop of the sauce/ricotta mix on the noodle.


4. Sprinkle some mozzarella on top. {FYI: fresh, grated mozzarella probably tastes better than the grocery brand, lol.}


5. Place another dollop of sauce.


5. Layer another noodle.


6. More sauce.


7. Last step...more cheese.


TaDah!  All Done!!



When you're ready to eat it, just stick it in the microwave for a minute or two. {You don't need to bake them since the noodles are already cooked. You CAN put ramekins in the oven, though, for other recipes.} Such a easy lunch to bring to work or school! Especially when you can package it up like this in your lunch bag, refrigerator, or freezer.
