{shredded chicken...the answer to everything!}

Hi. Yes, I'm back.

So this is the space issue I have:


So because of that, every recipe I share on here will be very easy to make. I'm working with limited kitchen appliances (dorm floor kitchen) and basic pots & pans.

This idea is not only for people with Celiac, but everyone!  All you need is:
  • 4 boneless, skinless chicken breasts
  • a sharp knife
  • a pot
  • a cutting board
  • a stove


Step 1: After filling the pot with water, let it come to a boil. During this time, take out the chicken and put it on the cutting board. Cut off any fatty pieces and then slice each in half. 


Step Two: Once the water is boiling, place in the chicken. (Since my pot is so small, I put in fours halves the first go-around, and four halves the second time.)

It took my pieces about 8-10 minutes to fully cook. It could depend on the size of the pot or size/thickness of the chicken...so make sure to check!  If it's pink in the center, throw them back in for a few more minutes.


Step Three: Once the chicken is cooked, let it cool on the cutting board before you start shredding. 


Step Four: Shred!


Step Five: Place them in Ziploc bags and freeze them.

This is such a smart thing to do at the beginning of the week. If you're always on-the-go, it's such an easy way to get a little extra protein in each meal.  I plan on using some of this chicken in a salad, a pesto pasta dish, and bbq chicken pizza :)

Last-minute tips: remember you'll be working with raw meat. To avoid salmonella, make sure you clean the cutting board and surrounding surfaces very well before you place the cooked chicken on there.
